Cake Balls

So, I decided to make some cake balls for dessert while we had some company last week.  They are pretty easy, very adorable, and yummy.  I got the original recipe from here.  It's a Paula Deen recipe.

Ingredients:

  • 1 (18.25 ounce) package cake mix (and whatever you need to bake the cake)
  • 1 (16 ounce) container prepared cake frosting
  • 6 ounces of chocolate flavored confectioners coating disks or bar
  • Food Coloring (optional)

  1. Start by baking the cake according to the directions on the box.  When it's finished baking, allow it to cool for about 30 minutes or longer.
  2. Crumble the cake into a large bowl using a stand or hand mixer.

3.  Add the frosting and mix until well combined.  (I added an entire can of vanilla frosting.  They turned out way too sweet for our taste, so next time I will either use a less sweet frosting like cream cheese or something.  Or I will just use less frosting all together).

4.  Next, I divided the dough up into four bowls and mixed in food coloring.  Place the dough in the refrigerator for three hours or more.  (I left it in overnight).

5.  Line a baking tray with wax paper.  Use a melon baller as a scooper to form balls with the cake mixture. Place on wax paper. Once you have used all of the cake mixture, place the baking tray in the freezer for 1 hour.

6.  Melt the chocolate in a glass bowl of the microwave, stirring every 5-10 seconds until smooth.

7. Remove the balls from the freezer. Using one toothpick, pick up the balls one at a time and dip in the chocolate. Use a second toothpick to slide the ball off the first toothpick onto the wax paper lined baking tray.  (I found that it was easier to just dip them like buckeyes, leaving the top open so you could see the color of the cake ball).

8.  Place the balls in the refrigerator until the chocolate is set (only a few minutes).  Taa-daa!

  2. My favorite combo is red velvet cake with cream cheese frosting dipped in chocolate. Another good one is strawberry cake with vanilla frosting dipped in white chocolate (I did those for my sister's baby shower since they were pink). Yummy!
